Trachyspermum ammi

Ajowan Essential Oil, also called Ajwain Essential Oil, is steam distilled from the dried seeds of Trachyspermum ammi (synonym Carum copticum) herb growing in India. This pale yellow to brownish liquid with its potent, sharp, pungent, medicinal-spicy aroma is widely used in Ayurvedic preparations, spice accords, culinary notes and apothecary blends.

All parts of this herb have a very strong scent hence it is also known as Ugragandha in Sanskrit. The seeds have a bitter and pungent flavour, somewhat like oregano, and because of its strong aromatic essence, it is often added to curries and pickles.
